Ahh, ice cream. It’s good for the soul, and when you make it with these 5 ingredients, it’s good for the body too.
Here’s what you need:
1 cup steamed cauliflower (frozen)
2 cups Mango chunks
1 cup pineapple chunks
1 can whole fat coconut milk
1-2 TBS maple
Here’s what you do:
Add all ingredients into blender, blend until smooth, pour in baking tin lined with parchment paper- freeze, for at least 5 hours. Remove from freezer, let thaw slightly- scoop into bowl & top with whatever you’d like (coconut shreds, nibs, fresh fruit) or enjoy on it’s own.
This is why we chose these ingredients:
→ Cauliflower – high in biotin. Your baby needs biotin to aid in DNA replication. Plus biotin boosts your skin, hair and nails and do the same for your baby.
→ Mangos – high in fiber and water content can help prevent constipation
→ Pineapples – 1 cup of pineapple contains nearly 100 percent of a pregnant woman’s recommended daily intake of vitamin C. It’s also a solid source of folate and iron.
→ Coconut Milk – high in magnesium, potassium and zinc. It’s also high in fat, but the saturated fat consists of a medium-chain triglyceride called lauric acid. Unlike other fats, medium-chain triglycerides are digested like carbohydrates. They’re easily absorbed and they’re immediately available for energy (which we need for growing a baby).
→ Maple Syrup – a low glycemic sweetener, maple syrup is a good option to help satisfy your sweet tooth. Just keep it in moderation.
