Trail mix Energy Date Balls

- 1/2 cup dates pitted
- 1 tablespoon honey
- 1 tablespoon coconut oil melted
- 1/3 cup oats
- 1/3 cup peanut butter
- 1/2 cup almonds
- 1/2 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 1 teaspoon vanilla
- 1/4 cup golden raisins
- 1/4 cup dried cranberries
- 1 1/2 tablespoons chia seeds
- Add all of the ingredients to a food processor (except chia seeds and dried fruit). Set food processor to high blend and mix until all the ingredients break down and resemble a course wet sand.
- Add in chia seeds and dried fruit. Pulse until the ingredients are well incorporated and the dried fruits breaks down slightly.
- With a small ice cream scoop (or small spoon), scoop about a tablespoon worth of the mix and rolls in between hands to form small balls. Repeat this step until all the mix is used. It should create about 12 balls.
- Allow the balls ti set up in the fridge, for at least an hour.
- Serve and enjoy!
