Tuna Casserole

Tuna Casserole

  • 4 cups of Penne Rice Pasta
  • 2 cans of Albacore Tuna in water (drained)
  • 1 24 ounce jar of marinara sauce
  • ½ white onion (diced)
  • ½ teaspoon garlic powder
  • 1 ½ cups Mozzarella cheese
  • ¼ teaspoon dry oregano
  • ½ teaspoon dry basil
  • 1 Tablespoon fresh parsley (chopped)
  1. In a pot on the stove cook and prepare pasta according to instructions (usually cooks anywhere from 7-14 minutes).

  2. Preheat oven 350 degrees F. Spray 9 x 13 inch pan with cooking spray.

  3. In a large bowl combine marinara sauce, garlic powder, optional dry herbs, diced onion, 2 cans of tuna, 1 cup of shredded low fat mozzarella cheese. When pasta finishes cooking drain and add. Mix well.

  4. Add all ingredients into a prepared baking dish. Top with remaining ½ cup of cheese. Bake at 350 degrees F for about 15 minutes. Turn up the heat to 450 and bake an additional 5 minutes or until the cheese on the top of the casserole has browned.

  5. Remove from oven and garnish with freshly chopped parsley.
