I was browsing Instagram the other day and saw this amazing idea from a reader @CupOfJo.
“I’m a working Mom, and my best low-key Summer trick is Popsicles at the Park. It’s just going to the park, but you get to eat a popsicle there. By the way our kids respond, you’d think we were giving away free iPads. Plus, it’s a team thing. Any parent in our neighborhood can put out a text: “Park. Popsicles. 7pm.” And, anyone can show up. It’s been a great way to make the most of summer evenings. There is a box of Popsicles in my freezer right now, just waiting for the moment to strike.” – Allison
Now there are some popsicles you can get from the store that aren’t loaded with sugar and artificial flavors, but even then there’s usually some yucky ingredients you don’t want to give your kids.
So I asked Hailee, one of our chief content creators, to come up with a healthy popsicle recipe that would please the Moms and the Kids.
Here’s what she came up with.
These take less than 5 minutes to prep, and about an hour or two to freeze.
Here are the ingredients she used, but honestly any frozen fruit blended up and poured into a popsicle mold will work.
(You can get the molds on Amazon or just use an ice cube tray and popsicle sticks).

6 Easy-release Popsicle Molds With Sticks and Drip-guards
BPA-free
WHAT YOU NEED
• ½ cup coconut chunks- frozen
• ½ cup organic mixed berries- fresh or frozen
• ½ cup filtered water
• ½ cup non-dairy milk of choice
• 1 scoop vanilla protein powder (optional)
WHAT YOU DO:
• Add all ingredients into high powered blender, blend on high until all ingredients are liquified.
• Pour equally into popsicle molds and place in freezer.
• Let freeze completely (1-2 hours) before trying to remove from mold!
